OUR VISION
Bringing Authentic Jamaican Flavors Across Montreal Since 2013
Welcome to Boom J's Cuisine, the home of authentic Caribbean cooking in Montreal. Founded on April 19, 2013, by Chef Jermaine "Boom J" Wallace, our story began in the heart of Pointe-Saint-Charles on Wellington Street. Driven by a passion for traditional family recipes, bold island seasonings, and drum-grilled Jerk Chicken cooked the real way, Boom J's quickly grew into a local Sud-Ouest institution.
The Story of Founder Jermaine Wallace
Before Boom J's Cuisine became a household name across Montreal, Jermaine Wallace started with a simple vision, a strong work ethic, and an unconditional love for authentic Jamaican home cooking. Learning the art of island spices and traditional recipes at a young age from his family in Jamaica, Jermaine brought those exact traditions to Montreal.
Starting from a home kitchen, taking text message orders, and delivering meals across the neighborhood, Jermaine built Boom J's from the ground up the old-fashioned way—focusing on real human connection, community mentorship, and pure authenticity. The "J" in Boom J's stands for Jermaine, but his mission has always been about making every guest feel like family the moment they walk through the door.
Why Boom J's Serves the Number 1 Jerk Chicken in Montreal: Unmatched Consistency
When it comes to Jerk Chicken, anyone can get it right once—but at Boom J's Cuisine, we sell consistency.
Our reputation as Montreal's top spot for Jerk Chicken is built on an unwavering commitment to quality that never changes from day to day or location to location:
* Authentic Marinating Process: Every piece of chicken is marinated for two to three days in a meticulously crafted blend of fresh island herbs, allspice, thyme, garlic, and scotch bonnet peppers.
* The Authentic Drum Grill: We grill our Jerk Chicken on authentic oil drums imported directly from Kingston, Jamaica. This delivers that signature, slow-smoked charcoal flavor, crispy aromatic skin, and juicy interior that you cannot replicate on a standard flat-top grill.
* Uncompromising Standards: Whether you order a quick lunch plate on a Tuesday or book catering for a massive weekend event, you get the exact same bold flavor, perfect spice level, and generous portions every single time.
Two Neighborhood Locations in the Sud-Ouest
As our community of supporters grew, so did our footprint across the borough.
* Pointe-Saint-Charles (Wellington Street): Our original flagship location where the journey started, serving hot meals, box patties, and takeout daily.
* Ville-Émard (Boulevard Monk): Our second location featuring an elevated dine-in atmosphere, bringing authentic Caribbean classics and specialty products closer to neighboring communities.
Taking the Island Vibe on the Road: Our Original Food Truck
To bring our signature dishes directly to large crowds, corporate gatherings, and Quebec's biggest cultural events, we launched the original Boom J's Cuisine food truck. Equipped to handle high-volume event catering, our classic mobile kitchen serves up the iconic, slow-smoked charcoal flavors that put us on the map—including our famous Jerk Chicken, slow-braised Oxtail, Curried Goat, and freshly baked Jamaican Patties.
Expanding the Fleet: Boom Boom Poulet Frit (14-Foot Mid-Size Truck)
To make event catering even more flexible across Greater Montreal, we expanded our mobile fleet with a second, compact 14-foot food truck: Boom Boom Poulet Frit.
While our original truck focuses on traditional slow-smoked island plates, our Boom Boom Poulet Frit truck turns up the volume on island-style street food. Operating as a nimble mid-size truck, it easily fits into tighter private driveways, corporate office lots, and urban venues while serving up:
* Crispy Island-Style Fried Chicken: Golden, deeply marinated with our signature herbs and spices.
* Signature Jerk Poutine: Fresh fries and squeaky cheese curds smothered in our rich, savory jerk-infused gravy.
* Event Essentials: Sweet plantains, crispy fries, wings, and classic fan-favorite combos tailored for fast, high-energy event service.

Over the years, Boom J's Cuisine has proven its ability to scale operations for massive crowds and high-profile institutional clients. We are proud to have catered and served food truck favorites at some of Quebec's largest and most iconic festivals, including:
